Prepare the smokerThe first thing you want to do is get your smoker, like the PIT BOSS (which has a strong builddue to its stainless-steel burners and porcelain-coated cooking grids), ready. Ideally, you should preheat it to about 300° F, following the directions that come with it. Moreover, the smoked flavor of these stuffed peppers makes them different from other recipes.
Prepare the peppersBe sure to remove all the dirt in your peppers. The veins and seeds in your peppers can add to the heat. You can decide to remove them or leave them alone; that depends on you. And you can as well use a pepper corer to make the cleaning easier. Remember to save the top of the pepper to dice and add into the stuffing.
Cook the meatGet a large pan and cook the beef over a gentle heat until it becomes brown, and grind the sausage. After cooking, drain.
Prepare and cook the vegetablesCook the onions in oil until they are tender; dice your pepper tops with some splash of olive oil for about five minutes. Add your garlic and cook until the vegetables are softened about 3 minutes.
MixFirst, you have to shred the cheese, and then combine the vegetables and your cooked meats in a bowl and stir. Do well to set some cheese aside to top the peppers later.
Stuff the PeppersThen, you fill each bell pepper with the already mixed vegetables and ground meat.
SmokeCarefully place the stuffed bell peppers in the smoker; smoke for about 50 minutes. Smoke until they are slightly brown and tender. However, be careful so they don't get too soggy. You need some firmness. After some time, sprinkle the cheese you kept and keep smoking for another 10 minutes, or if you will until the cheese has melted.
ServeOnce you're done smoking, remove from the smoker, garnish with parsley, and your stuffed peppers are ready to be served. That's so easy!
