The first thing you need to do is prepare your grill. In case you do not own one you should buy a grill set to do your spinalis steak justice!
The ideal grill for this recipe is a charcoal grill but you can also make do with an electric or pellet grill.
You need to prepare your charcoal grill for two zone cooking by placing coals under one half of the grill grate. So light your grill using a BBQ lighter.
If your steak is thick, it is a good idea to season it on the sides as well!
Once the seasoning is done, place the steaks on the indirect-cooking side of the grill. We would highly recommend purchasing a to get this recipe right.
If you have a leave-in probe thermometer, insert the probe in so your steak cooks perfectly! The ideal temperature for the steak is 100°F (63 °C) so set that on the temperature alarm and close the grill.
Keep an eye on the temperature in the grill and try to make sure it does not go over 350°F and below 250°F.
When it hits the perfect temperature, you can move the steak and place it on the grates over the coal.
Cook the steak over here for around a minute, rotate it by 45° and top it off with some butter.
Flip the steak and keep checking the temperature.
Your steak should be done when the internal temperature hits 125–130°F (52–54°C), after which you can remove it from the heat.
